I was perusing Youtube and someone had posted the song off of the Marvin Gaye Collection (1990) The song sounded a lot more robust and slightly more uptempo. Did they record a different version of the track versus the version that was released as a single back in the day?

It's possible. They recorded "Pride & Joy" twice. I think most of MG's songs were recorded in one or two takes anyway. And in some cases, it was the same song done different vocally or musically (i.e., "Lucky, Lucky Me").
